Pistachio Latte {Vegan}

Coffee. Coffee. coffee. Coffee.

These are a few of my favourite things.

Yes, I’m addicted. No, I don’t apologize for it, and, in fact, I celebrate it.

But pistachio? In coffee?? Seems weird, right? Well, if you think about it, almond and hazelnut are both popular coffee flavours, so why not pistachio?

The inspiration for this comes from the Caffè el Pistacchio at Giovanne, which I tried for the first time a few years ago. Spoiler alert: It was delicious, and then recently, Starbucks came out with a Pistachio Latte. OF COURSE.

This Pistachio Latte recipe uses pistachio butter, and not a flavoured syrup (Starubcks calls it “pistachio sauce”), which, I must warn you, is kinda pricey. I know this because, while I do get a lot of stuff for free, I bought this jar of pistachio butter with my own money. Still worth it, though… I have been hoarding this jar for months and sneaking into my cupboard and taking little spoonfuls of it to savour straight from the jar. It’s the most beautiful, silky, tasty thing. I originally purchased it to make this.

To sweeten your Pistachio Latte, I add a little sweetened condensed coconut milk. You can either buy your own (the brand I’ve been using I don’t love because often when I open the can, there’s a slab of coconut oil on the top), or make it. It’s quite easy to do, with just a regular can of coconut milk, sugar and some time on the stove.

The crowning glory? Swipe a bit of the pistachio butter onto the outside or rim of your cup, and then dust it with some pistachio crumbs. Perfecto!

A vegan version of the Starbucks Pistachio Latte, but made with Pistachio Butter.

Equipment

  • espresso maker moka pot, Nespresso, etc

Ingredients
  

  • 1-2 tbsp pistachio butter
  • 2 tbsp sweetened condensed coconut milk
  • 1 cup oat milk or other non-dairy milk
  • 2 oz espresso

Instructions
 

  • In a small saucepan, place the pistachio butter, the sweetened condensed coconut milk and the oat milk, and whisk well together.
  • Heat over medium heat until just at the boil.
  • Pull two shots of espresso, and place in your cup.
  • Top with the pistachio milk mixture and enjoy!
