Strawberry Iced Matcha Latte {Vegan}

It’s been an unseasonably cold last few weeks here in Vancouver. After a blast of winter in January, it got really warm, and then it got really cold again towards the end of February. We’re set for it to be warmer starting this weekend. Finally.

It’s almost March break, and it’s times like this I start to think about summer. What will it look like this year? Where will I go? How will I spend my summer break (this summer it’s expected I’m going to be writing). And most importantly, how will I eat? What will I eat? What new restaurants will I go to?

Hibernation is over kids, let’s go!

One major thing that marks the seasons for me is I make a switch from hot coffee to iced coffee. I know there are many of you out there that drink iced coffee every day, no matter what the weather, but it’s just not me. Even in summer, my first coffee of the day tends to be hot. Habit? Maybe. It’s just how I like it.

But my second coffee of the day in summer is always a cold one.

This Strawberry Iced Matcha Latte is an alternate to your iced coffee, and it positively screams summer!!

You start by cooking down some strawberries into a kind of jam or puree, and that adds the sweet element to your drink. Top that with ice and non dairy milk of your choice, and finally your matcha, and you have a summer-worthy beverage, whether it’s summer or not!

Ingredients
  

For the puree

  • 1 cup strawberries frozen
  • 2 tbsp sugar
  • 1 tbsp lemon juice

For the latte

  • 1 cup non dairy milk of your choice I use oat

For the matcha

  • 2 tsp matcha sifted
  • 1/4 cup water just off the boil
  • freeze dried strawberries for garnish

Instructions
 

For the puree

  • Add the strawberries, sugar and lemon juice to a pot, along with about 1/4 cup of water, and bring up to the boil. Once it's boiled, reduce it to a simmer and allow to simmer for about 5-8 minutes. Take a potato masher and smash all the berries to make it a more uniform texture. If you want it to be really smooth, blend in a blender or with an immersion blender, but I like mine a bit chunky. Set aside to cool before using.
