Vegan Baking Made Easy follows up my first cookbook, Aquafabulous! 100+ Egg-Free Vegan Recipes using Aquafaba (Robert Rose, 2017).
To say that this book has been a bit of a roller coaster would be an understatement, but it’s here and it’s gorgeous, and I can’t wait for you all to see it!
I’ve been baking since I was a kid. I grew up in a house where there was pretty much always fresh baking. My mom baked, my grandparents baked… it was a really normal thing.
As I’ve gotten older, I notice that people don’t really bake that much any more, and I often joke that baking is my love language. I regularly bake presents for people. For their birthdays, for Christmas. I have dated people who joked that my love was going to make them fat.
As an adult, I have fallen into friendships with more and more people with allergies and intolerances. Several of my closest friends have severe allergies, and I wanted to bake for them. Enter vegan baking. With no eggs or dairy in the mix, it’s more accessible to those who are avoiding eggs, butter and dairy because of allergies or ethical or health reasons.
Everyone deserves cake, don’tcha think?
The purpose of the book is to demystify the challenge of vegan baking. In Vegan Baking Made Easy, I outline some tips and tricks for veganizing your baking, go over substitutes, and then includes 60 plant-based recipes, many of which are under 10 ingredients, take less than an hour to make, or are one-bowl.
It was my goal, while writing this book, to make vegan baking accessible to all. There are no weird ingredients in this book. Everything in there is easily available at your local grocery store or by Amazon.
I am also absurdly proud that there is zero tofu in these recipes. I don’t really love tofu.

I was very inspired by the recipes I baked growing up. These were classic bakes my mother made all the time, that I learned from her. In fact, quite a few of the recipes in this book came from her recipe box, which I veganized.
