Ingredients

  • 1 cup good quality sea salt I'm using Vancouver Island Sea Salt
  • 1 head garlic
  • 1/2 cup fresh rosemary
  • 1/2 cup fresh sage

Instructions

  • Preheat oven to 250 degrees.
  • Wash your herbs well and spin or pat dry.
  • Strip the actual leaves from the stems and discard the stems.
  • Peel the garlic cloves.
  • In the bowl of a blender or food processor, place the herbs and the garlic, along with a 1/4 cup of the salt. Whiz everything well together until it becomes a fine, sandy consistency.
  • Dump the contents out into a bowl and add the rest of the salt. Using your hands, scrunch it all together until it's well mixed.
  • Spread your salt out onto a baking sheet, and bake in preheated oven for about 10 minutes. Remove, stir well, and bake for an additional 10 minutes.
  • Remove from oven and allow to stand until completely cooled. It should be dried enough by now that you can scoop it into individual containers.
